Rapid Analysis of Plant Pigments in Salt-Pickled Mibuna

The plant pigment content in salt-pickled mibuna was examined using short-time simultaneous analysis with Unison UK-C18, and it was found that high salt concentration is effective in maintaining the state of the pigments.
